List document countries

GET 
/api/v2/documents/countries

List the country names a document can be uploaded for.

The name is the exact value documents_create takes in document[country]; a code such as UK or GB is refused. Narrow the list by part of the name with name_contains.

countries[].name feeds documents_create.
